First, gather up your ingredients.
5 boneless, skinless chicken breasts, chopped into chunks (not pictured)
1/2 tsp cayenne pepper
1 cup chili sauce
salt and pepper
2 gallon freezer bags (not pictured)
Slice your onions and divide them between your freezer bags. Please ignore the third bag, I did cut up an extra onion for that (some sweetfire pork chops) - it has very little to do with the sliced onion you see below.
Add 1/4 tsp of cayenne pepper to each bag, along with a dash of salt and pepper.
Then, add 1/2 cup of sweet chili sauce to each bag.
Add 1/2 of the cut up, but not cooked, chicken to each bag, mix it all up, and then lay everything flat (should cover only half of the bag). Label it and pop it in your freezer.
When you're ready to make this meal, take it out of the freezer and put it into the refrigerator the night before. The next night, when making dinner, pre-heat your oven to 350 degrees and place the contents of the bag into an oven safe dish.
Cook for 25 minutes at 350 degrees.
When done, serve over rice or veggies. We used RiceSides' Herb & Butter rice and it was the perfect complement to the sweet chili sauce.
Mmm ... delicious! I am so glad that I came across this meal - it is the perfect blend of sweet and spicy. Josh also loved it and we both agree that this is a must make for the future! If you didn't want to make a freezer meal of it, you would prepare everything as I did and then instead of placing it into the freezer, you would simply place it directly into the oven to cook. Enjoy!
