Then slice your bread (I used rosemary focaccia) into thin, sandwich bread size slices.
Drizzle about 1 - 1 1/2 tablespoons of olive oil onto your bread.
Then, slice your mozzarella into 1/4 inch slices and place 2 or 3 slices on top of one half of your sandwich.
Do the same with the tomato - slicing it into 1/4 inch slices and place 2 on top of the other half of your sandwich.
Then, place both halves in the toaster oven on the toast setting for 5 to 10 minutes or until cheese is melting and bread is lightly browned.
After you remove from the toaster oven, drizzle balsamic vinegar over each half and bring them together to make the sandwich.
Finally, slice your mozzarella and tomato melt in half and enjoy!
