A Soup-er Weekend


Good morning and happy Monday everyone! Did you all have an amazing weekend? I know I did! It was exactly the relaxing weekend that Josh and I wanted to have. And, to top it off, it was the perfect fall weekend – crisp autumn weather and a great opportunity for some cooking and fall fashion! And I am very happy to report that my first soup (of the 26 I'm aiming for - read all about that here) is complete. 

I cooked this chicken enchilada soup from Real Mom Kitchen that I found on Pinterest. It was so easy to make and I got to use my crock pot. It’s only the second time I’ve ever used one – the first time for a delicious apple butter that I also made this weekend (I will share that with you tomorrow)! The ingredients were easy to assemble and they included:

1 15-ounce can black beans, rinsed and drained
1 14.5-ounce can diced tomatoes
1 10-ounce package frozen whole kernel corn
1/2 cup chopped onion
1 red bell pepper, chopped
1 10-ounce can enchilada sauce
1 10.75-ounce can condensed cream of chicken soup
1 1/2 cups milk
1 cup shredded Pepper jack cheese
2 chicken breasts


 After I got all of the ingredients together, the rest was easy. First, I combined the black beans (drained and rinsed), diced tomatoes (not drained), package of frozen corn (hiding under the red pepper in the picture above), ½ cup chopped onion and 1 red bell pepper in the crockpot.


 Then, I placed the two uncooked chicken breasts on top of the mixture.


Finally, I whisked the enchilada sauce, condensed cream of chicken soup and milk in a bowl and then poured that over the chicken breasts and mixture.



Then I let the crockpot take over! I cooked it on high for 4 hours, covered. After those 4 hours, I removed the chicken breasts, shredded the chicken and put it back into the soup. Then I served myself a nice big bowl, topped with some shredded pepper jack cheese. It. Was. Delicious. Beyond delicious.

And this picture does not do it justice. At all. If you’ve ever had Chili’s enchilada soup, this tastes almost exactly like it. My soup was a bit thinner than I would have liked, but I think it may have just needed a dollop of sour cream. Either way, I loved it and now, I’ve officially completed 1 soup in my goal to cook 26 different soups this year – only 25 more to go before I turn 27!
